What valuation date makes sense and how do I set it?
Our by-laws currently state that the value of a withdrawing
member's holdings are set at the next meeting following
receipt of withdrawal.

How about the Friday just prior to the meeting date? If that doesn't give you enough time to print out the reports, etc, make it the Thursday just prior the meeting date.
