In my email program(s), the header contains two lines, one labeled "From:" and the other labeled "Reply to:". When you click on reply, your reply will be sent to the "Reply to:" address. If you want to reply privately, and not to the entire club_cafe list, just note the information in the "From:" line and edit the "To:" line in your reply.

As a member of the I-Club-List at NAIC, I know how embarrassing it can be to
reply to the entire list a message that was meant to be personal. To
alleviate your concern, you can simply sign off as a member of Bivio Cafe
and visit the board on the homepage, instead. That would solve your problem.

For me, the "Re: club_cafe:" in the subject line tells me the message is
"public", so I don't make the mistake of answering it with a personal
message. Each to their own, I guess.
